Alejo Véliz was born in Gödeken, a small town located approximately 120 km away from Rosario in the Province of Santa Fe. At the tender age of three, he began playing football in his hometown's club. However, when he was just six years old, his family relocated to Bernardo de Irigoyen, another town in Santa Fe. There, Alejo continued his football journey at the Club Unión Deportivo y Cultural, progressing through all the youth teams until he turned 16.

In late 2019, Véliz underwent trials with Rosario Central, but his official involvement with the club was delayed due to the COVID-19 pandemic's impact on youth competitions. Nonetheless, on 23 July 2021, he made his professional debut for Rosario Central, stepping in for Alan Marinelli during a 1-0 home triumph against Deportivo Táchira from Venezuela in the Copa Sudamericana's round of 16. However, it was during the subsequent season that he truly made a mark, scoring his first goal on 2 May 2022 in a 2-1 away loss to Club Atlético Huracán in the Copa de la Liga.

Véliz continued to shine, netting his second goal in the next game, contributing to a 3-1 victory against Estudiantes. Notably, this match was also the farewell game for his idol and mentor, Marco Ruben, at the Rosario Central Stadium. The young talent further solidified his place in the spotlight on 21 July 2022, as he scored the sole goal in Rosario Central's historic Clásico Rosarino triumph over Newell's Old Boys in the Primera División.

Alejo Véliz received his first call-up to the Argentina national under-20 team by Fernando Batista in October 2021. Subsequently, he was selected again by the new U20 head coach, Javier Mascherano, in February 2022 and for the following spring. In January 2023, Véliz once more joined the U20 squad under Mascherano for the South American U-20 Championship in Colombia, where Argentina was eliminated in the first round. Due to Indonesia losing its hosting rights for the 2023 FIFA U-20 World Cup, Argentina automatically qualified and became the host nation.
